Honey Butter

This is a favorite breakfast or Sopaipilla accompaniment in our house.  The sweetness and flavour of the honey couples with the creamy richness of the butter really well.  Keep in an airtight container in the fridge, remove well in advance of use to allow to soften.

1 lb      Salted Butter (don’t use unsalted for this recipe)

1 cup     Honey (good quality is important for this one)

Place butter in a medium bowl, and leave out until softened and room temperature

Add honey to bowl, and begin to whip together with an electric mixer.

Whip until completely uniform and no longer grainy.  This can take 5-10 min depending on temperature in the kitchen.

Place in an airtight container, and store in fridge.  Alternatively, you can place on a large piece of kitchen wrap or parchment paper, and roll into a log.
