Christmas Cooking Photos

One of the things I enjoy about the holiday season, is having a bit of time off to do some cooking.  I try to get in some baking, and then after our traditional Christmas Eve Chinese Dinner (thank you Moon Wok) I settle into cooking for the main event.  Here are a few pictures from the last two years.  

I am trying to get better at both photo taking and working with the photo’s here, so this is serving as a bit of a practice for me.  It is interesting, the second most difficult part of creating content for me is the photo’s. I am working to get better at it, but regardless I hope you are able to find some inspiration in the pictures.

New Recipe – Short Rib Stew

Hi all

So continuing with my sporadic recipe developments, I have posted a new recipe for a stew I have been making for a few years now. This is my favorite version of it, and it utilizes beef short ribs.

It is -25c outside today, so it seemed to be a good day to post something with that ‘stick to your ribs’ quality.

A Year in Review – 2021

As we (all too quickly) approach Christmas 2021, I find myself looking back upon another year spent living with that most unpleasant of uninvited guests, Covid.  It has been a strange year, fires, floods, pandemic and highways rendered impassable.  We brought Supergirl to a close, and now are working on bringing a new TV series to life.  It has been another year of working from home, which is difficult professionally, but has been very nice personally.

We haven’t been able to spend time with family or friends as we would have liked, but we have used the means at hand to keep in touch and make sure everyone is doing ok.  It isn’t an easy time, but we are doing alright with it, and like everyone else we look forward to a day when we can again feel comfortable spending time.

Due to work constraints, I have found it hard getting to finalizing a few recipes that I am working on so that I can post them up.  I have been doing quite a bit of cooking, but most of it is the day to day stuff that really isn’t that interesting.  I have played with doing processed cheeses, something that has been both fun and productive.  I have also started to do some work with ground beef jerky and pepperoni, which has also been fun and productive.

I didn’t do much meat smoking this summer, the fires contributed more than enough smoke to the atmosphere, I just couldn’t bring myself to add to it.  I am hoping that over this Christmas break to be able to do some smoking, but first I need to tuck into some festive season baking.

Being home has allowed us to frequent some of our favourite restaurants and stores.  Some of these are old favorites, and a few are new.  We really are very fortunate to have such a selection of eateries and stores in Kamloops.  There have been a couple of new eateries open that we haven’t been able to attend yet, but we will as the current situations allow.  On that note, I will work on another post with some details on some of our favorites.

In closing, Kathy and I wish everyone a Merry Christmas, and a Happy and Healthy 2022.  May we all be together again next Christmas!

I am still alive…

Greetings to my intrepid reader!

I hope that this missive finds everyone well and surviving the challenges that 2020 has brought with it.  As I type this, we are just entering into Christmas season for 2020, and the second wave of Covid 19.  It is a tough time for everyone, and it looks like it will be for a bit yet.

In my absence from the site here, I have been doing a lot of cooking, making messes and coming up with some recipes that I am hoping to get up here soon.

I have expanded on my ‘low and slow’ cooking with a few new things.  I have gotten into sous vide cooking, and my Chief Taste Tester treated me to a Primo XL ceramic grill.  This has afforded me the opportunity to start to work with smoking meats and then sous vide cooking them which has taken my meat game to a whole new level.

I continue to work in film and television, and with Covid I have been working the last few months from home.  I am still working on Supergirl, and this year we are working on the final season.  It has been an exceptionally busy and tiring grind, but we should have a break coming up at Christmas where I hope to catch my breath.

Competing for my time with everything else are two new projects,  both living in the garage at the moment.  We are doing a full restoration on a 1990 Chev travel van, and it’s little fiberglass friend a 1977 Triple E Surf-Side travel trailer.  Both need pretty much full functional restorations, so that has been absorbing a fair amount of time.  I will be detailing some of these projects on the site as we go along as well.

But I am going to make a concerted effort to work on this site a bit more regularly (sound like deja vu all over again?)  No major changes planned, just some more recipes and some information on cooking with a Sous Vide immersion cooker.

A New Recipe (at last)

I have finally gotten the final testing done on what is currently one of my favorite pasta dishes.  It is a great savory pasta with prawns in a butter and wine sauce that comes together pretty quickly.  It is a great weekend dinner for two, or can be quick enough for a weeknight meal if you have an early day.

I am trying to work through some recipes that I have in development stage, but especially now that I am out of town so much, it is slowing down that process.  I have been enjoying some good eats at the coast, both trying out new places as well as visiting some of my old favorites.  As things settle down a bit, I am going to profile a few of them here at the Kitchen.

Fall is settling in, first snow on the Coquihalla today, so I guess the rain here at home will get fat and white before too much longer.

I hope that this finds everyone happy and well, and about to enjoy a great Thanksgiving with family.  From our house to yours, all of the best, and we hope to talk to you soon!

A labour of love

As I sit here tonight having just assembled the Pantry Chicken Stew recipe, I am reflecting on my time working on the site.  When I started this project, web blogging was a total unknown to me – the coding, the writing, the design – it has been a real learning curve for me.

I am really enjoying the process.  I thrive on learning new things, and this has really fed that need.  It has gotten me to record some of my food creations, which even if I am the only user, it is nice to have them where they can be accessed weeks/months/years down the road.

It is also a time consuming process.  This I think I underestimated greatly.  Because I think I lead a fairly average life, I don’t feel a need to prattle on about having done the laundry on the weekend (ok, Kathy doing the laundry on the weekend), or going to McWhereever for food on the fly – it just isn’t that interesting.

Because of this, my posts are for the most part recipes, and each recipe page is the culmination of hours of work.  I love the time spent doing it, and having a finished page for the site is rewarding for me creatively.  But because it takes so long to work up a recipe from an initial creation on a plate to a recipe ready for the site, I find it taking me considerable periods of time between posts.   I have a few recipes I am working on, and hopefully they will be ready for the site before too long.

I think that I will stick with the quality over quantity approach to the site.  Gradually I will build up content, and hopefully some of my faithful readers (one of the two of you anyway) will find time to recreate a recipe or two.  I am always interested in feedback, and I hope that somewhere along the way you will find something of interest and value here on the pages of Scott’s Country Kitchen.

Pictures… Issues with…

As some of you will be finding, when I add pictures to a post sometimes the images are not in the correct rotation for the page.   I am aware of the issue, and am trying to find a way to address it.

The images have been cropped and rotated properly before uploading.    However there seems to be an issue with that rotation being maintained on some browsers, in particular ones on mobile devices.

I am  actively seeking a solution for this problem, and hopefully the WordPress community can find a way to correct it very soon.

Canning Spam

Hey all

After a week of battling 50-100 auto bot attempts a day to register for the forums, I was able to spend some time today to install software to (hopefully) remove that little annoyance from my life.

For anyone looking to sign up to the site, it should be the same as it was before, my change to the software should be invisible to a legitimate user.  I have done some testing, and it seems to be functioning as it should, and for the first hour I haven’t seen any spam registrations come thru.  That is a great change from the 5-10 per hour that have been hitting the site the last week.

If you are trying to register for the site and encounter any difficulties, please let me know by email and I will look after your registration and see what can be done to prevent any issues from re-occurring.

Major Announcement – New Site Feature!

Well, it has been a busy few days here at SCK.  One of the things that has been on my ‘work in progress’ list for the site has been to make it an interactive experience, instead of just a place to read and maybe comment on what I have posted.  I wanted from the outset for this to be a truly interactive site, where anyone and everyone who wishes to come visit has an opportunity to share and interact, sharing the diverse knowledge that we all bring to the kitchen table.

Today I completed the work on establishing this feature for the site.  It will likely need some adjusting over time, but I believe that it is good to go and ready for you to play with.  The new features include messaging as a group and privately between members, and a forum to communicate as a wider group.  While anyone can continue to comment on posts without registering as before, to participate in the Community requires registration.

On the top left of the screen you will find a Registration link.  It’s quick and easy, just your name, email and pick a user name.  Then you validate your registration by an email, and your all done!  You will then be able to log into the site and be part of the community.  My hope is that over time, with enough interest it will become a place where one can ask and answer questions, share stories, make friends and enjoy some company with like minded people.

If you have any issues with the process, please let me know right away.  As mentioned before, this is a learning process for me.  However I think that this will be worth the effort.

I’ve been at it again…

Hi all

I have been working on the site quite a bit the last couple of days.  I have revamped The Storeroom, changed up the format a bit and added some content that hopefully you will find interesting.

One of these changes is  the addition of information on some of my favorite publications and websites.  I have added pages and links for Cooks Illustrated / Cooks Country / Americas Test Kitchen, as well as Alton Brown’s Good Eats and books.  These are two of my most favorite sources of information and education on cooking.  I really encourage you to check out these sites / publications.

I have included links to these and a number of other items on Amazon.ca as part of the pages.  I hope that it adds some utility to the pages, making finding some of my favorite items online a snap.

As we recover from the Holiday season, and life begins to get back to normal, I look forward to continuing my work here, and I hope that you will continue to drop by.

I am interested in any suggestions, comments or questions you have for or about the site, and I hope to see you again many times thru the year.

The Storeroom

As we close in on the last day of the year, I have started the process of bringing The Storeroom online.  In The Storeroom I will be listing some of the kitchen items that I use, and that make my time in the kitchen more productive and enjoyable.

I will be listing link to some of the products on Amazon.ca.  My experience with Amazon as a consumer has been very good, and I am pleased to being trying the Associate Program with them which will allow me to link to their products, and receive a small commission on any sales.  I am not looking to make my fortune, but if it helps cover some of the costs of maintaining the site, that would be a bonus.

As with everything else on the site, it is a work in progress, but I hope that you will find the information both useful and interesting.

Greetings everyone!

My return to the website in earnest has been delayed again.  No sooner did I get the operating system software on my laptop re-installed and software back up and running, the computer itself decided that it had gone as far as it was prepared to and blew it’s cooling fan.  Due to age it wasn’t practical to repair, and the heat build up quickly ‘baked’ the machine.

That led to the search for a new laptop, which being the research junkie I am that took some time.  After securing a decent deal via Black Friday sales, I was up and running with a new laptop.  Well, running being relative, as out of the  box computers tend to not do too much.

After a number of hours getting everything reinstalled and set up, I am back in action.  Just in time for Christmas…

I have been busy in the kitchen, getting my usual collection of Christmas baking laid up.  Tarts and cookies galore, enough to get thru the season and have a stock in the deep freeze for future enjoyment.

 

I will be getting back into the swing of things here shortly.  In the meantime, I will be spending time with friends and family over the holidays, and I hope that you will as well.
