Green Eggs and Ham

“YOU DO NOT LIKE THEM. SO YOU SAY.
TRY THEM! TRY THEM! AND YOU MAY.
TRY THEM AND YOU MAY, I SAY.

SAM! IF YOU LET ME BE,
I WILL TRY THEM. YOU WILL SEE.

(… and he tries them …)

SAY! I LIKE GREEN EGGS AND HAM!
I DO! I LIKE THEM, SAM-I-AM!”

Serves 2-3 people

This is just a fun mix up for scrambled eggs. There is a little café in Kamloops that serves something similar, this is just my take on it.

5                              Eggs (large)

4 tbsp                    Milk

2 tsp                      Salt

1 tsp                      Pepper

1 tsp                      Hot Sauce (Franks is my choice)

1.5 tbsp               Pesto Sauce

1 cup                     Ham diced (thick cut preferred)

2 Tbsp                   Butter

 

Place 12” non-stick pan over medium high heat. Add butter and cook until melted

Combine eggs, milk and pesto in medium bowl – mix until well combined

Add remaining ingredients and stir to incorporate

Add egg mixture to pan and reduce heat to medium

Stir regularly until fully cooked.

Serve on a plate by themselves, or as I prefer in warm wrap grilled lightly after filling.

Preferences:

Scrambled eggs are one of those things that people have distinct preferences about. For what it is worth, here are my preferences when doing scrambled eggs.

  • Cooked slower over medium heat, after starting at medium high
  • Cook until fully cooked, but still moist. I order them “scrambled soft” when I go out
  • NO browning of the eggs. Again just a preference, but I do not care for eggs that have been let get brown no matter how you do them. It imparts a taste to the eggs I don’t care for
  • Serve in a toasted wrap. This turns the eggs into a hand food, and allows the addition of cheese or burger sauce or whatever you like to the dish.
  • Use really high quality eggs. I am fully convinced that the cheap grocery store eggs have such poor flavour compared to a high quality egg. In baking or a dish where there are a lot of other flavours, it doesn’t matter as much. However in dishes where eggs are the main flavour, it makes all the difference. I am currently using the Country Golden Yolk Free Range eggs that I get at the various Overwaitea Food Group stores (Save On, Price Smart, Coopers etc.), and I am disappointed whenever I use something else out of necessity.
